Irish Rebel Stew

Ingredients:

  • 2 tablespoon olive oil
  • 2 lbs diced turkey breast
  • 1 cup onions, diced
  • 1 large sweet potato, diced
  • 1 medium parsnip, cut into chunks
  • 3/4 cup Guinness stout
  • 3/4 cup whole wheat flour
  • 3/4 cup water
  • 1/2 tablespoon fresh tarragon
  • 1/8 teaspoon fennel seed
  • 1 teaspoon paprika
  • 1/2 tablespoon fresh oregano
  • 1 1/2 teaspoon Worcestershire sauce
  • 1/4 teaspoon black pepper
  • 1 teaspoon crushed bay leaf
  • 3/4 tablespoon fresh thyme
  • 3/4 tablespoon fresh parsley

Directions:

  1. Sauté the onions in a large pot in 1 tablespoon olive oil until soft.
  2. Dredge the turkey in the flour and brown the turkey in 1 tablespoon olive oil. Add the turkey to the onions.
  3. Steam the roots (parsnips, sweet potato) in a separate pot until just tender.
  4. Add water and the Guinness to the onions and turkey to thicken.
  5. Add in the vegetables and cook about 15 minutes.
  6. Add in the Worcestershire sauce.
  7. Turn off the heat, add in the herbs.

Turkey is a great source of amino acids — the building blocks of protein. Turkey is also a source of L-tryptophan which can have a relaxing effect. Tryptophan helps with the production of serotonin, a mood regulator within the body.

Generally low in fat and high in protein, turkey is a good source of iron, zinc, phosphorus, potassium and B vitamins. While turkey’s dark meat contains more fat, it also contains more iron than its white meat. Whether you start with frozen or fresh turkey, enjoy this Irish Rebel Stew as a healthy way to incorporate turkey into your diet.
