Waldorf Dandelion Salad
Ingredients:
- 2 green apples, cubed with skin
- 1 cup roasted black walnuts
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup red bell pepper, chopped
- 1/2 cup onion, minced
- 1/2 cup celery, chopped
- 1 tablespoon yellow mustard
- 2 tablespoon mayonnaise
- 2 cups dandelion greens, washed, wilted, and chopped
Directions:
- Add together all ingredients in a large bowl. Toss well.
- Chill for 1 hour, then serve.
Yield:
10 servings (3/4 cup)
