Spinach, Walnut, and Fruit Salad with Chicken

shelled walnuts


  • 12 ounce chicken breast
  • Non-stick cooking spray
  • 8 cups fresh spinach
  • 1 orange
  • 1/3 cup dried cranberries
  • 1/4 cup chopped walnuts
  • 1/4 cup crumbled feta cheese
  • 4 dried apricot halves
  • 8 tablespoons balsamic vinaigrette


  1. Heat a medium non-stick skillet over medium heat. Spray with cooking spray, heat again for a few seconds, and then add the chicken breast. Heat chicken until cooked thoroughly (no pink). Remove the skillet from heat. Slice chicken into strips.
  2. In a large salad bowl, add spinach, cranberries, feta, and walnuts.
  3. Peel orange. Cut orange into inch cubes. Add to ingredients in salad bowl.
  4. Cut dried apricots into small pieces, similar to cranberries in size.
  5. Lightly toss all ingredients in the salad bowl.
  6. Place sliced chicken (warm or chilled) over the top.
  7. Serve immediately and enjoy!
