Ingredients:
- 1/2 white onion, diced
- 1 green bell pepper, diced
- 1 block tofu, drained and pressed
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon dried basil
- 1/2 tablespoon soy sauce
- 2 tablespoons nutritional yeast
- 1/2 teaspoon paprika
Directions:
After draining off all excess water from the tofu, gently crumble it, and set aside.
Sauté the onion and green pepper in oil for three minutes; stir often. Add tofu and sauté for another minute. Add remaining ingredients, reduce heat to medium and allow everything to cook for five more minutes, stirring frequently.
Serve hot with a side of 100 percent whole grain toast and fruit. This can also be wrapped in a tortilla and eaten like a breakfast burrito.
