Cinnamon Roasted Almonds

Ingredients

  • 1 egg white
  • 1 tsp cold water
  • 4 cups whole almonds (or mixed nuts)
  • 1/2 cup white sugar
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon

Directions

  1. Preheat oven to 250°F. Spray 10x15 inch jellyroll pan with cooking spray.
  2. Lightly beat the egg white. Add water and beat until frothy but not stiff.
  3. Add the nuts and stir until coated.
  4. Mix sugar, salt and cinnamon together. Sprinkle mixture over nuts and toss to coat.
  5. Spread nuts evenly on prepared pan. Bake for 1 hour, until golden. Stir occasionally. Allow nuts to cool before storing in airtight containers.

Yield

Makes 16 servings.
