Recipe of the Month
Three Bean Salad
Ingredients:
- 2 cups cooked kidney beans
- 2 cups cooked black-eyed peas
- 2 cups fresh or frozen green beans, cooked but still firm
- 1 small red onion, cut into rings
- 2 tablespoons parsley, chopped
Marinate with:
- 1-2 tablespoons honey
- 1/3 cup vinegar
- 1/4 cup flax oil
- 1 teaspoon tarragon
- 1/2 teaspoon basil
- 1/2 teaspoon dry mustard
Directions:
- Mix marinade well and pour over the other ingredients. Refrigerate.
