Three Bean Salad

Ingredients:

  • 2 cups cooked kidney beans
  • 2 cups cooked black-eyed peas
  • 2 cups fresh or frozen green beans, cooked but still firm
  • 1 small red onion, cut into rings
  • 2 tablespoons parsley, chopped
Marinate with:
  • 1-2 tablespoons honey
  • 1/3 cup vinegar
  • 1/4 cup flax oil
  • 1 teaspoon tarragon
  • 1/2 teaspoon basil
  • 1/2 teaspoon dry mustard

Directions:

  • Mix marinade well and pour over the other ingredients. Refrigerate.

Flax

Flax provides alpha linolenic acid (ALA), which the body converts to omega-3 fatty acids found mainly in fish. Such fatty acids may reduce the inflammatory process suspected in several cancers. Flax is also high in fiber and antioxidants. Avoid raw honey if you have had a bone marrow or stem cell transplant in the last 100 days
