Chocolate Chia Seed Pudding

Ingredients:

  • 1 1/2 cups unsweetened almond milk
  • 1/3 cup unsweetened cocoa powder
  • 1 tablespoon + 1 teaspoon maple syrup
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/3 cup chia seeds

Garnish (optional)

  • 1/4 cup raspberries (fresh or frozen)
  • 1 tablespoon fresh mint leaves, chopped
  • 1/2 teaspoon unsweetened shredded coconut, toasted
  • 1/2 teaspoon chocolate shavings or cocoa powder

Directions:

  1. Add 1/4 cup almond milk and cocoa powder in a bowl. Whisk well to combine.
  2. Add in remaining almond milk, maple syrup, cinnamon, salt and vanilla extract. Whisk to combine.
  3. Stir in chia seeds.
  4. Cover and place in fridge. Stir after 3 hours. Let chill overnight.
  5. Garnish with raspberries, mint, toasted coconut, and chocolate shavings.

Preparation Time | Yield:

20 minutes, plus overnight chilling | 4 servings

Nutrition Tip

Chia seeds are rich in omega-3 fatty acids, fiber, and contain protein. Given their absorbent and gelatinous texture when soaked in water, they can be easily added to many breakfast items and even desserts. Add chia seeds to bump up the omega-3s and fiber in your morning yogurt, oatmeal, or smoothie. Omega-3 fatty acids are an essential “healthy fat” with anti-inflammation and immune supportive properties. Diets rich in omega-3s may help decrease the risk of developing certain types of cancers, heart disease, and depression, and they support overall health.
