Carrot and Ginger Salad

  • Carrot and Ginger Salad 


    • 1 pounds carrots, grated
    • 3 green onions, thinly sliced
    • 1-inch piece of fresh ginger, grated
    • 1 teaspoon sesame oil
    • 2 teaspoons canola or vegetable oil
    • juice of 2 limes
    • 1/2 teaspoon sugar
    • salt and pepper to taste


    1. Place all ingredients in a serving bowl and stir to thoroughly combine.
    2. Serve chilled or at room temperature.


    2-3 servings

    Rich in vitamin A and beta-carotene, carrots may also have cancer preventive and immune supportive benefits.
