Cucumbers with Ginger Vinaigrette
- 2 large cucumbers, peeled and thinly sliced
- 1/3 cup rice vinegar
- 1/2 teaspoon salt
- 2 teaspoons fresh ginger, grated
- Place cucumbers in a bowl or plastic zipper bag. Combine remaining ingredients and pour over cucumbers.
- Chill overnight, mixing occasionally.
